Oreo Cupcakes

Delicious and so easy to make. They look professional even though they’re made by a novice baker. They were inhaled by all the boys in my house!

Cupcake Ingredients

100g plain flour
20g cocoa powder
1 1/2 tsp baking powder
140g caster sugar
40g butter (room temperature)
120mls whole milk
1 egg
1/4 tsp vanilla essence

Cupcake Method

Heat oven to 180*c/ and line tray with cupcake cases.

Put flour, cocoa powder, sugar, baking powder and butter in the mixer. Beat on a low speed until to you get a Sandy consistency.

Add in the milk, egg and vanilla extract.

Beat until the mixture is smooth.

Spoon into the paper cases until 2/3 full.

Bake in the oven for 20-25 minutes or until the sponge bounces back when touches.

Leave to cool on a wire rack.

In the meanwhile make the icing.

Cream Cheese
Frosting Ingredients

100g butter (softened)
100g icing sugar
200g full fat cream cheese
5 Oreos (filling removed)

Cream Cheese
Frosting Method

Beat the softened butter to a soft consistency.

Add the icing sugar and cream until until you have a smooth consistency.

Add cream cheese and slowly mix in with wooden spoon.

Break up the Oreos with a rolling pin and mix into the icing with a wooden spoon.

Ice the cupcakes and add an Oreo to decorate.
